Gaga over gourds: Brown sugar spiced pepitas (pumpkin seeds)

BROWN SUGAR SPICED PEPITAS (PUMPKIN SEEDS)

CRUNCHY WITH A LITTLE zip-tang, these pumpkin seeds are great as a garnish.

1 cup raw (green) pepitas (1/4 lb., not toasted)

1 tablespoon vegetable oil

1/2 teaspoon salt

1/8 teaspoon cayenne

1 tablespoon light brown sugar

Place the oil in a (12-inch or so) heavy-bottomed pan.

Warm the oil over medium-low heat. Add the pepitas and stir constantly until the seeds are golden and puffed. This will take about 8 to 10 minutes.

Remove the pepitas with a slotted spoon and place in a bowl. Sprinkle with the salt, cayenne and brown sugar. Toss gently until coated.
